Crispy Smashed Potatoes with Sundried Tomato Pesto and Sour Cream Drizzle

Preparation time: 30 minutes

Crispy Smashed Potatoes with Sundried Tomato Pesto and Sour Cream Drizzle

INGREDIENTS

  • 1 Jar Jars of Goodness Sundried Tomato Pesto
  • 600gms Baby Potatoes
  • Fresh Basil for garnish
  • Sour cream dressing (blend together and store in a squeezy bottle)
    • 1/4 teaspoon kosher salt
    • Freshly ground black pepper, to taste
    • 1/4 teaspoon sugar
    • 1/8 teaspoon garlic powder
    • 3 tablespoons vegetable oil
    • 1 tablespoon white wine vinegar
    • 1/4 cup sour cream

METHOD

  1. Preheat oven to 200C.
  2. Boil potatoes (15 mins)  Lay on a baking tray covered with parchment. 
  3. Smash with the bottom of a glass.  Spoon 1 tsp pesto and cover over potatoes. 
  4. Gently flip and spread pesto on the other side.  
  5. Bake for 10 mins.   Flip and bake on the other side. 
  6. Remove and drizzle the dressing and garnish with torn basil leaves.
